Ingredients
- Muffin Batter: 1 cup (240 ml) strong sweet tea cooled, 1/2 cup (115 g) unsalted butter melted, 2/3 cup (135 g) granulated sugar, 2 large eggs, 1 3/4 cups (220 g) all-purpose flour, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, 1 1/2 tsp ground cinnamon, 1/2 cup (80 g) mini marshmallows, 1/2 cup (90 g) semisweet chocolate chips, 1/2 cup (50 g) graham cracker crumbs
- Topping & Assembly: 1/2 cup (90 g) semisweet chocolate chips melted, 1/2 cup (40 g) mini marshmallows, 1/2 cup (40 g) graham cracker crumbs, 18 lollipop sticks or popsicle sticks
Instructions
- Prepare Muffin Tin:
- Preheat oven to 350°F (175°C). Grease a mini muffin tin or line with mini muffin papers.
- Mix Wet Ingredients:
- In a large bowl, whisk together melted butter and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in cooled sweet tea.
- Combine Dry Ingredients:
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Combine Batter:
- Gradually add dry ingredients to wet, mixing until just combined. Fold in marshmallows, chocolate chips, and graham cracker crumbs.
- Bake Muffin Pops:
- Fill mini muffin cups about 3/4 full. Bake for 16 to 18 minutes, or until a toothpick in center comes out clean.
- Cool Muffins:
- Let muffins cool in pan for 5 minutes, then transfer to wire rack to cool completely.
- Insert Sticks:
- When cool, insert lollipop or popsicle stick into base of each muffin.
- Decorate:
- Dip tops of each muffin pop into melted chocolate, then sprinkle with marshmallows and graham cracker crumbs. Let set until chocolate is firm.
