# Directions:
01 - Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
02 - In a large, clean mixing bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add granulated sugar, continuing to beat until stiff, glossy peaks are achieved.
03 - In a separate bowl, whisk egg yolks with cornstarch and vanilla extract until the consistency is smooth and well-combined.
04 - Carefully fold the egg yolk mixture into the whipped egg whites, using a gentle motion to avoid deflating the batter.
05 - Divide batter evenly into separate bowls according to the number of desired colors. Add several drops of gel food coloring to each bowl, folding gently for even distribution.
06 - Using a spatula or spoon, place colorful dollops of batter side by side on the prepared baking sheet to create a rainbow pattern. Swirl with a spatula for a marbled appearance if preferred.
07 - Transfer to the oven and bake for 25 minutes, or until set and lightly golden.
08 - Allow to cool briefly before lifting off the baking sheet. Serve immediately for optimal fluffiness.
