- Beef broth: 1 cup (240 ml)
- Sour cream: 1 cup (240 g)
- Cream cheese: 2 tbsp, softened
- Wide egg noodles: 8 oz (225 g)

Instructions
- Prepare the noodles:
- Cook the egg noodles according to the package instructions. Drain and set aside.
- Brown the beef:
- In a large skillet over medium-high heat, add the ground beef and cook until browned, breaking it up with a spatula (about 5 minutes). Drain excess fat if needed.
- Sauté vegetables:
- Add the chopped onion and cook for 2 minutes until softened. Stir in the garlic and mushrooms. Cook for another 3–4 minutes until mushrooms are tender.
- Season:
- Sprinkle in the taco seasoning, smoked paprika, salt, and pepper. Stir well to coat the beef and vegetables.
- Add tomato paste & broth:
- Add tomato paste and cook for 1 minute. Pour in the beef broth. Bring to a gentle simmer and cook for 5 minutes, letting the flavors develop.
- Make it creamy:
- Reduce heat to low. Stir in the cream cheese until melted and incorporated. Add sour cream and mix until the sauce is smooth.
- Combine noodles:
- Add cooked noodles to skillet and toss to coat in the sauce.
- Finish and serve:
- Taste and adjust seasoning. Serve hot, garnished with chopped cilantro or parsley if desired.
