01 - 8 slices sourdough bread
02 - 8 slices sharp cheddar cheese
03 - 4 tablespoons unsalted butter, softened
→ Pickles & Spice
04 - ½ cup dill pickles, thinly sliced
05 - 1 small jalapeño, thinly sliced (optional)
06 - 2 tablespoons pickled jalapeños, chopped
07 - 1 tablespoon hot sauce (e.g. Sriracha)
→ Optional Dipping Sauce
08 - ½ cup ranch dressing or tomato soup, for serving
# Directions:
01 - Spread softened butter evenly on one side of each bread slice.
02 - Place 4 slices of bread, buttered side down, on a clean surface; layer each with 2 slices of cheddar cheese.
03 - Evenly distribute dill pickles, fresh jalapeño slices if using, and chopped pickled jalapeños over the cheese.
04 - Lightly drizzle hot sauce over the pickles on each sandwich.
05 - Top with remaining bread slices, buttered side facing up.
06 - Warm a large nonstick skillet or griddle over medium heat.
07 - Place sandwiches in skillet and cook 3 to 4 minutes per side, until golden brown and cheese is melted.
08 - Remove from skillet, allow to cool slightly, then cut each sandwich into strips for dipping.
09 - Serve warm with ranch dressing or tomato soup as preferred dipping sauce.
