# Directions:
01 - Melt butter in a large saucepan over medium heat. Add onions, sugar, and a pinch of salt. Sauté, stirring frequently, until onions are soft and golden, about 10 minutes.
02 - Add minced garlic and cook for 1 minute, stirring constantly. Incorporate dried thyme and bay leaf.
03 - Pour in dry white wine and let simmer for 2 minutes, allowing it to reduce slightly. Add vegetable broth, bring to a gentle simmer, and cook uncovered for 10 minutes. Remove and discard the bay leaf. Adjust seasoning with salt and black pepper.
04 - While soup simmers, preheat broiler. Toast baguette slices until golden. Ladle soup into broiler-safe bowls.
05 - Top each bowl with a toasted baguette slice. Cover generously with Gruyère and Parmesan cheese.
