# Directions:
01 - Preheat oven to 400°F (200°C).
02 - Toss diced sweet potato with olive oil, smoked paprika, and salt. Spread evenly on a baking tray and roast for 20 minutes, stirring halfway, until tender and lightly caramelized.
03 - Spread black corn tortilla chips in a single layer on a large ovenproof platter or sheet pan.
04 - Distribute roasted sweet potato, black beans, and grated cheddar cheese evenly over the chips.
05 - Bake for 5 to 7 minutes, or until the cheese is fully melted and bubbling.
06 - Remove from oven. Scatter diced red onion, jalapeño slices, and crumbled cotija or feta cheese if using over the nachos.
