# Directions:
01 - Set the oven to 375°F and lightly grease a 9×13-inch baking dish with olive oil or cooking spray.
02 - Season chicken breasts evenly with salt, pepper, and half of the oregano, basil, and thyme. Optionally, pound chicken to an even thickness for consistent cooking.
03 - In a large bowl, combine zucchini slices with olive oil, minced garlic, lemon juice, lemon zest, and the remaining oregano, basil, and thyme. Season with salt and pepper.
04 - Arrange the seasoned chicken breasts in the center of the prepared baking dish and spread the seasoned zucchini around the chicken in an even layer.
05 - Place the baking dish in the oven and bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F.
06 - If using cheese, sprinkle Parmesan or feta over the chicken and zucchini during the last 5 minutes of baking, allowing it to melt.
07 - Remove from the oven and let the chicken rest for 5 to 10 minutes before slicing. Serve with roasted zucchini, garnished with extra herbs or a drizzle of olive oil if desired.
