→ Avocado Fries

08 - 2 large ripe avocados, sliced into 0.5-inch wedges
09 - 2 large eggs
10 - 1 cup almond flour
11 - 0.5 cup grated Parmesan cheese
12 - 0.5 tsp smoked paprika
13 - 0.5 tsp garlic powder
14 - 0.5 tsp sea salt
15 - 0.25 tsp black pepper
16 - Olive oil spray for baking

→ Zucchini Ribbons

17 - 2 medium zucchinis
18 - 1 tbsp olive oil
19 - 1 tbsp lemon juice
20 - Salt and pepper to taste

# Directions:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - In a shallow bowl, beat eggs. In a separate bowl, mix almond flour, Parmesan, paprika, garlic powder, salt, and pepper.
03 - Dip each avocado wedge in egg, then coat in almond flour mixture. Place on prepared baking sheet, lightly spray with olive oil, and bake for 15-18 minutes, turning halfway, until golden and crisp.
04 - Pat steak cubes dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add steak cubes in a single layer and sear 1-2 minutes per side until browned but still pink inside. Remove and set aside.
05 - Reduce heat to medium, add butter to the skillet. Once melted, stir in minced garlic and cook 30 seconds until fragrant.
06 - Return steak bites to the skillet, toss in garlic butter, and sprinkle with fresh parsley.
07 - Using a vegetable peeler or spiralizer, shave zucchinis into thin ribbons. Toss ribbons with olive oil, lemon juice, salt, and pepper.
08 - Serve steak bites hot with avocado fries and zucchini ribbons on the side.

# Expert Advice:

01 -
  • You get restaurant-quality steak with that perfect garlic butter coating without the carb guilt.
  • The crispy avocado fries are addictive enough that you'll find yourself making extra even when no one's watching.
  • Everything comes together in 40 minutes, which means weeknight dinner that feels like you tried.
  • It's naturally gluten-free and actually tastes better than the regular version.
02 -
  • The steak needs to be absolutely dry before it hits the pan; any moisture steams the meat instead of searing it, and you'll lose that gorgeous brown crust.
  • Don't flip the avocado fries more than once; they're delicate and too much moving around means they fall apart instead of crisping up.
  • Everything should be plated and eaten right away because the steak gets cold fast and the avocado fries soften within minutes of coming out of the oven.
03 -
  • Buy your avocados a day or two before you plan to cook; they need that sweet spot of ripeness where they slice cleanly but still hold their shape.
  • Keep your skillet hot enough that the steak sizzles immediately when it touches the pan, otherwise you'll steam instead of sear.
