# Directions:
01 - In a large bowl, mix mashed potatoes, chopped ham, diced onion, parsley (if used), egg, flour, salt, and black pepper until a uniform, thick mixture forms.
02 - With floured hands, form the mixture into eight patties approximately 2.5 inches in diameter and 1/2 inch thick. Lightly coat each patty with additional flour.
03 - Preheat vegetable oil or butter in a large skillet over medium heat until shimmering.
04 - Cook patties in batches, frying for 3 to 4 minutes per side until golden brown and crisp. Avoid crowding the pan to maintain even cooking.
05 - Transfer cooked patties to a paper towel-lined plate to absorb excess oil. Serve immediately while hot.
