01 - Heat oven to 375°F (190°C) and line a baking sheet with parchment paper.
02 - In a large mixing bowl, combine ground chicken, Parmesan, breadcrumbs, parsley, minced garlic, beaten egg, dried oregano, salt, and black pepper until thoroughly mixed.
03 - Add whole milk to the mixture and mix gently until the ingredients are fully incorporated and cohesive.
04 - Divide the mixture evenly into four portions and form each into a compact mini loaf. Place the loaves onto the prepared baking sheet, leaving space between each.
05 - Drizzle each loaf with olive oil. If desired, sprinkle mozzarella over the tops. Bake for 25 to 30 minutes, or until golden brown and an internal temperature of 165°F (74°C) is reached.
06 - Remove loaves from the oven and let them rest for 5 minutes before serving.
