01 - 1.1 lb ground beef

→ French Onion Sauce
11 - 2 tablespoons unsalted butter
12 - 2 large yellow onions, thinly sliced
13 - 2 garlic cloves, minced
14 - 1/2 teaspoon sugar
15 - 1/4 cup dry white wine (optional)
16 - 2 cups beef broth
17 - 1/2 teaspoon dried thyme
18 - Salt and black pepper, to taste
→ Assembly
19 - 4 sub rolls
20 - 4 slices provolone cheese
21 - 4 slices gruyère or Swiss cheese
# Directions:
01 - Set oven to 400°F and line a baking sheet with parchment paper.
02 - In a large bowl, combine ground beef, breadcrumbs, milk, egg, grated onion, minced garlic, salt, pepper, thyme, and parsley. Mix gently until just combined.
03 - Form mixture into 16 evenly sized meatballs. Arrange on prepared sheet and bake for 15 to 18 minutes until browned and fully cooked.
04 - Melt butter in a large skillet over medium-low heat. Add onions, garlic, and sugar. Cook, stirring frequently, for 15 to 20 minutes until onions are golden brown and caramelized.
05 - If using, add white wine and simmer for 2 minutes. Stir in beef broth and thyme, season with salt and pepper, and continue cooking 5 to 7 minutes until sauce thickens slightly.
06 - Add baked meatballs to the sauce, gently coating them. Simmer for an additional 2 minutes to meld flavors.
07 - Split sub rolls and toast under grill or in the oven for 2 to 3 minutes until lightly crisp.
08 - Place four meatballs with sauce inside each roll. Top with one slice each of provolone and gruyère or Swiss cheese.
09 - Return assembled subs to oven or broiler for 2 to 3 minutes until cheese melts. Serve immediately.
