# Directions:
01 - Preheat the oven to 350°F. Line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal.
02 - In a medium bowl, combine the diced apples, peaches, lemon juice, sugar, cornstarch, and cinnamon. Toss gently and set aside.
03 - In a large bowl, mix the flour, oats, brown sugar, baking powder, salt, and cinnamon.
04 - Pour melted butter and vanilla extract into the dry mixture. Stir until crumbly.
05 - Press two-thirds of the crumble mixture firmly into the bottom of the prepared pan.
06 - Evenly distribute the fruit filling over the base layer.
07 - Sprinkle the remaining crumble mixture over the fruit layer.
08 - Bake for 40 minutes or until the top is golden and the fruit filling bubbles.
09 - Allow the bars to cool completely in the pan, about 1 hour. Use parchment overhang to lift out and cut into 12 bars.
