# Components:

→ Pasta and Sauce

01 - 12 ounces fettuccine or linguine
02 - 2 tablespoons olive oil
03 - 1 small onion, finely chopped
04 - 3 cloves garlic, minced
05 - 12 ounces cremini or button mushrooms, sliced
06 - 4 cups fresh baby spinach
07 - 1 cup vegetable broth
08 - 1 cup heavy cream
09 - 1/2 cup grated Parmesan cheese, plus extra for serving
10 - 1/4 teaspoon crushed red pepper flakes (optional)
11 - Salt and black pepper, to taste

→ Garnish

12 - 2 tablespoons fresh parsley, chopped
13 - Zest of 1/2 lemon

# Directions:

01 - Heat olive oil in a large pot or deep skillet over medium heat. Add the onion and cook until translucent, about 3 minutes. Stir in the minced garlic and sauté for 30 seconds until fragrant. Add the sliced mushrooms and cook until browned, about 5 to 6 minutes. Season with salt and black pepper.
02 - Pour in the vegetable broth and heavy cream. Stir to combine. Add pasta in an even layer and press gently to submerge.
03 - Bring the mixture to a gentle boil, then reduce heat to medium-low. Simmer, stirring occasionally, until pasta is al dente and the sauce is thickened, about 10 to 12 minutes. If the sauce reduces before the pasta is cooked, add small amounts of water or broth as needed.
04 - Stir in baby spinach until wilted. Remove from heat and blend in grated Parmesan cheese and red pepper flakes, if desired. Adjust seasoning with additional salt and black pepper.
05 - Divide the pasta among serving bowls. Garnish with chopped parsley and freshly grated lemon zest. Finish with extra Parmesan cheese if desired.
