# Directions:

01 - Heat a splash of oil in a large deep skillet over medium heat. Sauté celery, red bell pepper, and garlic until softened, approximately 3 to 4 minutes.
02 - Add uncooked pasta, chicken broth, buffalo sauce, and milk to the skillet. Stir thoroughly and bring the mixture to a boil.
03 - Reduce heat to low and cover the skillet. Simmer for 10 to 12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
04 - Stir in the cooked chicken, cream cheese, mozzarella, optional blue cheese, salt, black pepper, and smoked paprika. Cook and stir for about 3 minutes until cheese is melted and sauce is creamy.
05 - Fold in green onions, taste for seasoning, and adjust if necessary.
06 - Remove from heat and garnish with additional green onions and a drizzle of buffalo sauce if desired. Serve immediately.
