09 - 1 to 2 tablespoons butter or cooking oil for frying
10 - Sliced bananas, berries, maple syrup, or yogurt for serving (optional)
# Directions:
01 - Place rolled oats into a blender or food processor and pulse until coarse flour forms.
02 - Add bananas, eggs, milk, vanilla extract, baking powder, salt, and cinnamon into the blender with oat flour. Blend until mixture is smooth and thick.
03 - Let batter rest for 2 to 3 minutes to allow thickening.
04 - Warm a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
05 - Pour approximately ¼ cup of batter per pancake onto the skillet. Cook for 2 to 3 minutes until bubbles form and edges set.
06 - Turn pancakes carefully and cook an additional 1 to 2 minutes until golden and cooked through.
07 - Repeat with remaining batter, adding butter or oil as needed. Serve warm with desired toppings.
